A must-have for French cuisine, this special copper pan is used for making Pommes Anna, a simple but glorious potato cake that is cooked on top of the stove, covered, or in the oven, uncovered. If you use the oven to cook the potatoes, either the top or the bottom of the pan can be filled.
The Pommes Anna Pan has a hand-tinned interior. The top of the pan is hammered copper. With a diameter of 8", the top is 1-1/4" in depth and will hold enough pommes Anna to feed six people. The 3-1/4" bottom has a 2.3 qt. capacity and will hold enough for 8 to 10. The matching pair of handles on the top and bottom are made of solid brass.
