You may recognize this terrine as the rectangular cookware from which you were served in French restaurants that small squarish slice of pate accompanied by the obligatory cornichons. This classic non-earthenware (terre=earth) terrine is made of porcelained cast iron by Le Creuset. It is 12-1/2" long and 4" narrow and holds 1 3/8 qt. Its shape means that each piece of pate cut from it will be uniform in shape ready to fit on a slice of French bread. Its eared handles and domed lid with a vent for steam finish off this perfect pate mold.
