This beautiful piece of cookware is from the Cuprinox pour la table line of Mauviel. The copper wok has a volume of 2.7 qts. and measures 11.8" in diameter and 2-3/8" in height. The thickness of the metal is 1.5mm. The wok's interior is stainless steel, which means it is easy to clean, never needs retinning, and can handle the higher temperatures required of stir-frying. Both handle and helping handles are bronze and are affixed to the pan with three sturdy rivets.
The benefits of cooking with copper are endless. It offers superior cooking control, so that whether you increase or reduce heat, it translates very quickly to the pan. Copper also heats more evenly than other metals, and low to moderate heat is best, resulting in better food flavor and nutrition.
The copper wok, and all Mauviel copper cookware, can be used on gas, electric, and halogen stovetops as well as in the oven or under the broiler. The flat bottom design stabilizes the wok, so there is no need for a ring.
