The old versions of this double boiler were made from aluminum. Thank goodness this new model is made from 18/10 stainless steel with a satin finish.

The upper pan holds a generous 1 1/2 qts and sits DEEPLY inside the 2 qt. lower pan. This design allows the rising steam to surround the upper pan for gentle but fast heating. The lower pan has an encapsulated tri-ply base for quick and even heat distribution. It sits snugly on the burner. The lid fits both pans allowing you to use either one or both together.
